Chocolate Chip Muffins
Ingredients:
* Hi-Lo Banana Chocolate Chip Muffins
* 2 cups Hi-Lo Cereal, divided
* 3/4 cup fat free milk
* 4 tablespoons mini semi-sweet chocolate chips, divided
* 1 1/3 cups whole wheat flour
* 1 tablespoon baking powder
* 1/2 teaspoon salt
* 1/4 teaspoon baking soda
* 1/2 cups mashed ripe bananas
* 2 tablespoons honey
* 2 large egg whites
* 3 tablespoons canola oil
* 1 teaspoon vanilla extract

Instructions:
Preheat oven to 400 F. spray 12 (3" dia.) muffin cups with non-stick cooking spray. In a large bowl, combine 1 1/2 cups cereal with milk, stirring to coat. Let stand 3 minutes. Meanwhile, coarsely crush remaining 1/2 cup cereal into a small bowl. Add 1 tablespoon chocolate chips. Set aside. In a medium bowl, combine flour, baking powder, salt and baking soda; mix. To cereal mixture, add bananas, honey, egg whites, oil and vanilla; mix well. Stir in remaining 3 tablespoons chocolate chips. Add flour mixture, stirring with a rubber spatula just until combined (do not over mix). Fill muffin cups to the top. Sprinkle
each with about 1 teaspoon crumb mixture. Bake at 400 F for 20-25 minutes. Allow to cool in pan on wire rack for 5 minutes. Makes 12 muffins.
